What to buy
- 275g plain flour
- 125g icing sugar
- 50g ground almonds
- 150g butter
- 2.5ml vanilla essence
- 1 egg
- about 2tsp/10ml water
How to make the biscuits
Place the flour, icing sugar and ground almonds in a bowl.
Rub in the butter until the mixture resembles breadcrumbs.
Stir in the vanilla essence, egg and enough water to mix to a smooth dough.
Wrap up the dough and chill for 30 minutes.
Preheat the oven to Mark 4/180°C.
Roll out the mixture and cut out the biscuits.
Place on a baking sheet and chill for 10–15 minutes.
Bake in batches for about 8 minutes, or until lightly golden brown.
Cool on a wire rack.
How to decorate the biscuits
Simply dust the biscuits heavily with icing sugar or ice them.
To make the icing, mix together 150g icing sugar with 20ml water and a few drops of food colouring.
Use a teaspoon to spread the mixture evenly over the biscuits.
Leave to dry, then sprinkle the biscuits with a little icing sugar.
